For a Mezcal to be classed as an Anejo, it must be aged for 12 months in barrels before bottling. Ilegal tends to age theirs for a total of 13 months which helps it to develop beautiful honey-like characteristics that make it a very delectable spirit that one would expect from a longer aged Mezcal. This ageing process helps to show off the quality of the casks which have been used and really show off its character, making it perfect to be enjoyed one sip at a time.
This unaged and ‘young’ mezcal does not have contact with any oak barrels (much like Blanco in the Tequilla category) and is bottled somewhat soon after distillation. Because there is no ageing process for this expression, this is certainly more fruit-focused than the aged mezcals within the category and is a carefully composed blend of sweet and smoke.
This is lightly aged for four months in oak barrels before bottling which helps to open and round this beautifully crafted example of a rested ‘Reposado’. This ageing process helps to draw out those beautiful notes of vanilla and spice but with a gentle undertone of smokiness that balances really well, that is less than that of its younger sibling. As a result, the smoke integrates exquisitely that creates a medium-bodied mezcal with those sweet highlights.
